Squash and Sausage Soup

This heartwarming Squash and Sausage Soup is inspired by Olive Garden's Zuppa Toscana Soup. It's creamy, cozy, and loaded with spicy sausage, butternut squash, mushrooms, and kale. Perfect for comforting days!

What you need

bunch green onion

butternut squash

cup heavy cream

tsp ground black pepper

cup water

tbsp kosher salt

white onion

tsp chicken bouillon powder

oz parmesan cheese

cup chicken broth
cup kale

oz mushroom

clove garlic clove

tsp fennel seed

lb italian sausage
Instructions
1: Heat oil in a large pot over medium-high heat. Add fennel seeds (if using), then sausage. Cook 7-8 minutes until browned, then remove sausage and set aside. 2: In the same pot, sauté mushrooms until cooked, then set aside with sausage. 3: Add onions to the pot and cook until translucent, then add garlic and cook for another minute. 4: Pour in broth, water, butternut squash, and bouillon (if using). Bring to a boil and cook until squash is tender. 5: Return sausage and mushrooms to the pot, stir in kale and heavy cream. Season with salt and pepper. 6: Serve topped with green onions and parmesan.
