1: Preheat oven to 350°F.
2: Cook sausage in oil over medium heat until browned.
3: Add onion and peppers; sauté for 2–3 minutes.
4: Lightly grease a 9x13 dish with sausage drippings or butter.
5: In a medium bowl, whisk together eggs, milk, garlic, salt, and pepper.
6: Add tater tots, sausage, kale, and half the cheese to the dish. Mix.
7: Pour egg mixture on top. Sprinkle remaining cheese.
8: Bake for 35–40 minutes, until golden and set.
