PB and Tarragon Cookies

cup sugar

tsp baking soda
egg

tsp dried tarragon
Instructions
1: Preheat oven to 350° F. 2: Crack your egg into a medium/large bowl. Add the sugar and whisk until it becomes pale and reaches the 'ribbon stage'. 3: Add the peanut butter, crushed tarragon, baking soda, and salt to the bowl. Mix until well combined and dough-like. 4: Line a baking tray with parchment paper or grease with cooking spray/butter. 5: Scoop the dough into balls (about 2 tbsp size cookies). 6: Use a fork to lightly press the cookie balls down into thick disks, crisscrossing the pattern. 7: Optionally, top the cookie disks with some large crystal sugar or Hershey kisses. 8: Bake in the oven for about 8 minutes. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a cooling rack.View original recipe
