Instructions
1: Soak dried beans overnight. 2: Drain, rinse, then simmer in fresh water until tender (lupini take about an hour). 3: In a big bowl, toss cooked beans with cucumber, tomato, onion, chilies, and ginger. 4: Add lime juice, salt, and cilantro.
