tsp dijon mustard

clove garlic

tsp black pepper

watermelon radish

oz feta
cup mixed greens

tbsp kosher salt
cup extra-virgin olive oil

cup red wine vinegar

cup farro

cup parsley

cucumber

red onion

cup kalamata olive
cup fresh tomatoes

can chickpea
Instructions
1: Whisk all dressing ingredients until combined (it should look creamy). 2: In a large bowl, combine chickpeas, cucumber, onion, radish, parsley, olives, and feta. 3: Add dressing and mix well. Set aside. 4: Layer 1 cup of chickpea mixture, 1/2 cup of farro, and 1-2 cups of mixed greens in mason jars or bowls with lids. 5: Refrigerate for 4-5 days. 6: To serve: Shake or mix before serving to blend the dressing.View original recipe
