Instructions
1: Poach chicken in a can of coconut milk with salt, Thai basil, galangal, kaffir lime leaves, and lemongrass. Set aside. 2: Make nuoc cham by mixing warm water, sugar, lime juice, fish sauce, minced garlic, and red chilis. 3: Cut cucumbers into thin strips, add torn herbs to a large bowl, dress with 2 tbsp of nuoc cham. 4: For Satay Sauce, combine red Thai curry paste, smooth peanut butter, sugar, soy sauce, apple cider vinegar, coconut milk, lime juice, and salt in a saucepan.
