1: Warm 1/2 cup cream in the microwave for 1.5 minutes. If desired, infuse the cream with flavorings and strain. 2: Add the warmed cream to a large bowl with 1 cup of chocolate. Let it sit for a couple of minutes to melt the chocolate. 3: Whisk the chocolate and cream mixture together until smooth. Set aside. 4: Add the remaining 1 cup of cold cream to a medium bowl and beat with a hand mixer until stiff peaks form. Reserve 1/2 cup of this whipped cream for garnish. 5: Fold the whipped cream into the cooled chocolate mixture in three parts, working quickly and gently. 6: Spoon the mousse into individual dishes and chill before serving.
