What you need

Instructions
1: Heat a wok or non-stick pan over medium-high heat and add oil. 2: Once oil is hot and almost smoking, add the mushrooms. Season with a bit of salt and cook until they release their water and begin to brown. 3: Once mushrooms begin to color and most of the water has cooked off, add the garlic and ginger. Cook for about 30 seconds. 4: Add the sugar, sesame oil, soy sauce, and chili paste. Cook for a minute or two until the garlic and ginger smell fragrant and the sauce clings to the mushrooms. 5: Add the Bok Choy to the pan and gently stir to coat the leaves in the sauce directly from the ice bath.View original recipe
