What you need

tsp kosher salt

cup sugar

tsp baking soda
Instructions
1: Place the diced apples in a large bowl and add the sourdough starter, spices, baking soda, sugar, salt and raisins (if using). Stir everything to coat the apples really well. Set aside for 10 minutes. 2: After your batter has rested 10 minutes (it should be VERY bubbly), preheat your ebelskiver pan, waffle iron, or cake pop maker. 3: Brush a very thin layer of coconut oil in all the holes of the pan or spray lightly with non-stick cooking spray. 4: Fill each hole nearly to the top and then add a small dollop of jam to the center. Allow this to cook until the top begins to bubble. 5: Use a spoon to loosen the ebelskiver and nudge it out so it rests on the spoon. 6: To achieve nice spherical shapes, add additional batter to the cavity after removing the ebelskiver with your spoon, filling about halfway.View original recipe
