Pohe is a quick and easy Maharashtrian dish made with flattened rice, vegetables, and minimal spices. This version includes mustard seeds, curry leaves, onions, potatoes, chilies, peas, coconut, cashews, raisins, and coriander leaves, topped with aloo bhujia. Perfect as a snack with tea.
