1: Heat ghee in your pan over medium-high heat. 2: Add cumin seeds and when they begin to sizzle, tip in all the ground spices. 3: Cook for a minute or two until spices no longer smell raw. 4: Add garlic and ginger and cook for an additional minute. 5: Toss the tomatoes into the pan and allow to cook down until the sauce thickens and tomatoes break down. 6: Put this mixture into a blender along with the coconut milk and blend until smooth. 7: Sieve the mixture back into the pan for a smoother curry, if desired. 8: Add cilantro and salt to taste. 9: Add eggs back into the pan and cook until your curry is as thick as you’d like.
