These delicious and easy-to-eat Onigiri were made using leftover jasmine rice and quinoa. The dish is seasoned with mirin, toasted sesame seeds, and egg/seaweed rice seasoning. Finely diced pan-fried Spam and spicy mayo are added, along with nori and soy sauce for dipping. A mold can create a perfect triangle shape or you can roll the rice into balls.
