Mango Halwa

A bright and special treat for breakfast, Mango Halwa is made with semolina, mango pulp, and flavored with cardamom, topped with cashews and dried cranberries. This comforting dish is fragrant and can be adjusted for sweetness based on the mangoes used.

1: Dry roast the sooji until it starts to smell fragrant and turns a slight golden color. Remove from heat and set aside. 2: Heat ghee and lightly fry the cashew nuts. Once they turn golden, remove from the ghee and set aside. 3: Keeping the ghee on the flame, add the sooji and fry for about five minutes or until it becomes fragrant and a little more golden. Then add the sugar and a bit of water (maybe a quarter cup). Stir until the sugar dissolves. 4: Add the mango pulp and a bit of cardamom. Stir until everything is well combined and the mixture is no longer very wet. It should come together like a loose dough. Remove from heat. 5: Stir in the fried cashews and the cranberries, keeping a couple to garnish, and enjoy!
