This spicy-sweet crispy tofu is a favorite dish, loved by kids and perfect for school lunches. Made with extra firm tofu, it's seasoned and fried until crispy, then tossed in a flavorful sauce that can be adjusted to your taste. It's great served with rice and vegetables.

1: Drain the water from the extra firm tofu, wrap it in towels, and place something heavy on top to remove excess moisture. 2: Slice the tofu into 12 thin pieces and coat them with corn starch. 3: Heat oil in a pan over medium heat and sprinkle the tofu slices with salt before adding them to the pan. 4: Fry the tofu in batches, flipping to cook both sides until lightly browned and crispy. 5: For the sauce, whisk together soy sauce, rice wine vinegar, mirin, toasted sesame oil, gochujang, honey, and water in a bowl and set aside. 6: In the same pan, heat additional oil and sauté sliced scallions, minced garlic, and ginger for about a minute. 7: Add the sauce to the pan, followed by the fried tofu, and cook until the sauce thickens and coats the tofu nicely.
